These delicious vegan vegetable pancakes are a healthy and easy breakfast or lunch option. Filled with colorful vegetables, these pancakes are made with lentil flour and tapioca starch, are gluten-free, and have a delicious texture.

Ingredients
• 1 cup lentil flour
• 2 teaspoons gluten-free baking powder
• 2 tablespoons of tapioca starch
• 1 teaspoon of salt
• A little black pepper
• 1 teaspoon dried vegetables
• 1.5 glasses of water
• 1 cup grated zucchini
• 1/2 cup diced capia pepper
• 1/2 cup chopped green onion
• 1/4 cup grated carrots
• Olive oil to grease the pan
Preparation
Mix Dry Ingredients: In a large mixing bowl, combine lentil flour , gluten-free baking powder , tapioca starch , salt , pepper , and dried vegetables .
Add Liquid Ingredients: Slowly add water to the mixture and mix until you obtain a homogeneous consistency.
Add the Vegetables: Add the grated zucchini, chopped bell pepper, chopped green onion and grated carrot to the mixture. Make sure all the ingredients are mixed well.
Cooking: Heat a non-stick pan over medium heat and grease it with olive oil. Pour a ladleful of the mixture into the pan and cook until golden brown on each side, about 3-4 minutes.
Serving: Serve the cooked pancakes hot.
