Ingredients
• 1/2 cup lentil flour
• 1 teaspoon gluten-free baking powder
• 1 tablespoon tapioca starch
• 1/2 teaspoon salt
• A little black pepper
• 1/2 teaspoon dried vegetables
• 3/4 cup water
• 1/2 cup grated zucchini
• 1/4 cup diced capia pepper
• 1/4 cup chopped green onion
• 1/8 cup grated carrots
• 3 large colored peppers (cut in half)
Preparation
Preheat the Oven: Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
Mix Dry Ingredients: In a large mixing bowl, combine lentil flour , gluten-free baking powder , tapioca starch , salt , pepper , and dried vegetables .
Add Liquid Ingredients: Slowly add water to the mixture and mix until you obtain a homogeneous consistency.
Add the Vegetables: Add the grated zucchini, chopped bell pepper, chopped green onion and grated carrot to the mixture. Make sure all the ingredients are mixed well.
Prepare the Peppers: Cut large colored peppers in half and remove the seeds.
Pour the mixture into the peppers: Pour the mixture you prepared into the peppers.
Cooking: Bake the peppers on a baking tray in a preheated oven for 30-35 minutes, until the edges are browned. The inside will be soft, but you can test it with a toothpick to see if it is cooked.
Remove the cooked peppers from the oven and serve hot.
