Ingredients

For the Quinoa Base:

• 1 cup quinoaGrains & Legumes

• 1 tsp vegetable powderDried Vegetables & Fruits

• 1 tbsp olive oilHealthy Oils

Salt & Black Pepper (to taste) → Spices


For the Roasted Sweet Potatoes:

• 1 sweet potato, diced

• 1 clove garlic, minced

• 1 tbsp olive oilHealthy Oils

Salt & Black Pepper (to taste) → Spices


For Extra Flavor:

• 1 tsp balsamic vinegarSauces, Vinegars & Pastes

Preparation

  1. Cook the Quinoa:

    Boil the quinoa with vegetable powder, salt, black pepper, and 1 teaspoon of olive oil. Once cooked, drain any excess water and set aside.

  2. Roast the Sweet Potatoes:

    Dice the sweet potato and toss it with minced garlic, salt, black pepper, and 1 tablespoon of olive oil. Spread evenly on a baking tray and roast at 180°C (350°F) for 20-25 minutes until golden brown.

  3. Combine Everything:

    Mix the cooked quinoa and roasted sweet potatoes in a bowl.

  4. Enhance the Flavor:

    Drizzle 1 teaspoon of balsamic vinegar over the mixture and toss to combine.
