Ingredients

• 250 g turkey breast

• 1 medium beetroot (unpeeled)

• 250 g leek greens (only the green parts)

• 2 tbsp rolled oats

• 2 tbsp vegetable powder

• Salt, black pepper, cumin

• 1 tsp olive oil

• 1 tsp vinegar

• 1/2 tsp baking soda

Preparation

1. Preparation:

• Cut the turkey breast into small pieces and process it in a food processor until it resembles minced meat.

• Add the unpeeled beetroot and chopped leek greens to the food processor, and blend until the mixture becomes smooth.

2. Adding the Rest of the Ingredients:

• Add oats, vegetable powder, olive oil, vinegar, baking soda, and spices to the mix. Blend again until the ingredients are fully incorporated and form a uniform mixture.

3. Shaping the Sausages:

• Transfer the mixture to cling film or parchment paper. Shape it into sausages and seal the ends tightly.

4. Cooking:

• Steam the sausages for 15–20 minutes. You’ll notice their color changing from pink to a light orange hue as they cook.

• For extra flavor, lightly grill them in a skillet after steaming.
