Ingredients

• 1 head of purple cauliflower (florets only)

• 1 purple sweet potato (cubed)

• 1 purple onion (sliced)

• 1 quince (cubed)

• 2 cloves of garlic (minced)

• Salt, black pepper

• Olive oil

• 1 cup sprouted red lentils (cooked)

• 2 stalks of green onions (chopped)

• 1 small handful of sautéed leek stems (optional)


Dressing:

• Juice of 1 orange

• 1 teaspoon mustard

• Olive oil

• Pomegranate molasses

• Salt, black pepper

Preparation

1. Prepare the Vegetables:

• Place the purple cauliflower florets, purple sweet potato cubes, sliced purple onion, and cubed quince on a baking tray lined with parchment paper.

• In a bowl, mix the minced garlic, salt, black pepper, and olive oil. Pour this mixture over the vegetables and toss to coat evenly.

2. Roast the Vegetables:

• Roast the vegetables in a preheated oven at 180°C (350°F) for 15-20 minutes, or until they are tender and slightly caramelized. Remove from the oven and let cool.

3. Prepare the Lentils and Additional Ingredients:

• Boil the sprouted red lentils until soft and drain.

• Sauté the leek stems lightly in olive oil if desired.

4. Make the Dressing:

• In a small bowl, whisk together the orange juice, mustard, olive oil, pomegranate molasses, salt, and black pepper.

5. Assemble the Salad:

• In a large salad bowl, combine the roasted vegetables, cooked lentils, chopped green onions, and sautéed leek stems.

• Pour the dressing over the salad and toss gently to combine.

6. Serve:

• Serve warm or at room temperature. This vibrant and nutrient-packed salad is perfect as a side dish or a light main course.
