Ingredients

• 1.5 cups of finely chopped cauliflower (florets only)

• 1/2 cup mung bean flour (or any flour of your choice)

• 2 tablespoons vegetable powder

• 1 tablespoon olive oil

• 2 teaspoons psyllium husk powder

• 1/4 cup ground flaxseed

• Salt, black pepper

• You may need to adjust the consistency with additional water or flour.

Preparation

1. Combine the finely chopped cauliflower florets, mung bean flour, vegetable powder, salt, black pepper, olive oil, psyllium husk powder, and ground flaxseed in a mixing bowl.


2. Mix until the ingredients come together to form a dough-like consistency.


3. Spread the dough onto a baking tray lined with parchment paper, shaping it into a large flatbread.


4. Bake in a preheated oven at 180°C (350°F) until the top is golden (approximately 15-20 minutes).


5. Flip the flatbread and bake the other side for another 5-10 minutes.


6. Remove from the oven, let it cool slightly, and serve.


Note:


For less flour usage, squeeze out the excess moisture from the cauliflower after pulsing it in a food processor. This time, I skipped that step for convenience.


Serving Suggestions:

• Use the flatbread as a wrap, pizza crust, or bread alternative.

• Spread yogurt, hummus, or avocado on top for a light meal.
