Bean Cake

This was my birthday cake :) I thought about what I could make for 24 people with simple ingredients that wouldn't bother me with cooking, and as much natural sugar as possible. I tried it once or twice with single portions. Of course, I also tried what I had in the pantry. For example, I ran out of cashews so I made the cream with hazelnuts. At first, I wanted to make mousse with couverture chocolate and apple puree that I made with my mother's garden apples last year. Since the consistency was runny, I then thought of breading with beans. :) I was going to make pavlon on top, but the recipe didn't work etc. etc. In the end, try this, try that, and this layered cake came out. The bean taste doesn't come through at all and it's extremely satisfying. Although it seems difficult because of the layers, it can be made in no time if you have the ingredients and a food processor :).

Ingredients
1)Base
- 1 glass of pitted dates soaked in hot water
- 1 cup of hazelnuts
- 2 cups finely ground oatmeal
2) Layer with beans
- 2 cups of boiled beans
- 2 cups of apple puree
- 1 glass of apple juice concentrate
- 1 tablespoon vanilla extract, if desired
- 1 cup 100% sugar-free hazelnut/almond/cashew paste (I tried poppy seed paste this time)
- 1 tablespoon orange zest
- 2 cups of melted chocolate
3) Hazelnut cream
- 2 cups of boiled hazelnuts
- 1 glass of dates soaked in hot water for 15 minutes
- 1 teaspoon vanilla essence, if desired
4) Melted sugar-free chocolate
- 1 tablespoon safflower oil (avocado/hazelnut oil also works)
- 1.5 cups of sugar-free chocolate
- If the chocolate is 100% dark, 4 tablespoons of coconut sugar/powdered dates/ground dried mulberries
Preparation
For the base
We grind the hazelnuts and the dates that I have soaked in hot water in the food processor.
We add oats and obtain a nice but crumbly dough.
We spread it to the bottom of our mold.
Kidney Bean Solid:
We drain the boiled beans and put them in the food processor. We break them into pieces as much as possible.
Add the apple puree and mix thoroughly until it reaches a coarse puree consistency.
Add the apple juice concentrate and blend for a long time.
Then we add the other ingredients one by one and grind them thoroughly in the robot.
We pour it over the base and put it in the refrigerator.
Hazelnut cream
We blend all the ingredients in the blender. Depending on the consistency, the water in which we kept the dates can be added.
Spread the 3rd layer of the cake we took out of the fridge with a spatula and put it back in the fridge.
Melted unsweetened chocolate solids:
Melt the chocolate in a bain-marie and add oil and, if necessary, any sugar you want to sweeten it.
We pour it as the last layer and spread it by turning it carefully.
After resting in the fridge for at least 4 hours, it is ready to serve!
By the way, you don't have to make 4 layers if you want, they are all a separate dessert on their own. You can make balls from the base, eat the bean layer on its own, make truffles with the chocolate on top and eat the hazelnut cream separately with fruit on top. :)
