Pear Cheese Galette

Don't say how, try it first 😆; I think a ripe pear and a sharp cheese go very well together and balance it. It also went very well with leeks. If you are open to different flavors, try it and write to me 😉

Ingredients

The dough

  • 1/2 cup buckwheat flour

  • 1/2 cup gluten-free oat flour

  • 1/2 tbsp powdered date or coconut sugar

  • 3 tbsp tapioca starch

  • 1 tsp cayenne pepper

  • 3 tbsp olive oil

  • As much cold water as it will take, I started with 2 tbsp. I used 6 tbsp in total.



Internal mortar

  • 1/2kg leek finely chopped

  • 3 cloves of garlic

  • 1 ripe pear, sliced

  • grated cheese I had some emmental cheese left over so I used that but I think any sharp cheese would go well; kars gruyere/ izmir tulum/ smoked cheese etc.

Preparation

  1. We combine the ingredients for the dough in a food processor.

  2. Finally, we gather it by hand and let it rest in the refrigerator for 30 minutes before opening it.

  3. For the filling, I first sautéed the leek and garlic with a little olive oil.

  4. After rolling out the dough, I put the filling on it, sliced the pears and arranged them on top and closed the edges.

  5. Preheated at 180 degrees, cooked in low & turbo mode for 30-35 minutes. If the bottom of the dough is browned, it is done.
